Maison Adam in St.-Jean-de-Luz, France

Macarons, small cookies filled with a light layer of cream, are a sought-out food experience in Paris. In fact Pierre Hermé started Le jour de Macaron, celebrated every March 20th.

And here in St.-Jean-de-Luz, at Maison Adam, you’ll find macarons but ones that are completely different and made from the original 17th century recipe. The Adam family made these special cookies for the marriage of Louis XIV and have continued to use the same secret recipe.
